Ales are more flavorful, robust, and complex beers. Distinguished by fruit flavors, ales also have a higher alcohol content than lagers. This difference occurs in the fermentation process - ale is brewed using yeast that gathers at the top of the fermentation tank. In contrast, lager uses a bottom-fermenting yeast that produces a crisper taste.
