Blanc de Noirs is a white wine from dark grapes. Juice from all grape varieties is white once pressed. Pigmentation occurs by leaving the liquid in contact with the red skin. When the juice is quickly separated from the skins and allowed to ferment, you get a white wine called Blanc de Noirs – white from dark.
This Champagne is made from the pinot noir grape and has more body and fruity freshness than a Blanc de Blanc. Its flavor levels, partially based on aging, range from extra dry to very sweet.
