Bourbon Whiskey
As American settlers moved farther south, they landed in the area known as Kentucky today. Here they chose the plentiful local corn to make their whiskey. This corn whiskey was popular and eventually became the first Bourbon. But not without one interesting turn of fate.Like almost everything in those days, whiskey was stored and transported in wooden barrels. Sometimes those barrels needed to be cleaned to eliminate the taste of the previous contents. To eliminate any ‘off flavors’, the settlers would char the inside of the barrels. Turns out storing whiskey in the charred barrels not only changed the color to a golden brown, but added wood sugars, and tasty notes of smoke, vanilla and baking spices. Today, the process for making Bourbon is virtually the same – taking clear corn whiskey and aging it in new charred oak barrels to create the same golden, sweet, smokey spirit, with a hint of vanilla and warm baking spices.
