Colour: bright red with crimson hue nose: classic southern rhone – rich earthy and organic with notes of luscious red cherries. Palate: a delicious mouth-filling wine with abundant fruit sweetness. Young bright and lively with good structure this wine is a fantastic expression of the southern rhone style. Food pairing: crispy pork belly. Vintage conditions: the 2015 to 2016 growing season was dominated by warm and dry conditions; this corresponded to a quick condensed flowering period. The summer period provided milder conditions which lead to gradual sugar accumulation and allowed us to harvest purely on flavour ripeness. Literally we threw the hydrometer (measures sugar) away. Winemaking notes: a renewed focus for the winery in 2016 has been minimal handling and intervention with the fruit. It was back to basics digging out of our fermenters has further accentuated the softness of our 2016 wines letting them better express the vineyards from where they came
