Of the cabernets we have produced in the last 10 years, the 2005 must rank among the best. Its character is spot-on varietal: rich aromas of cassis and blueberrry, with accents of sweet tobacco, mocha notes, cedar and black tea. Showing fine density on the palate, its tannins are firm but velvety adding lots of dimension to its juicy, ripe fruit character. An excellent companion for virtually any red meat or game, it will pair equally well with risottos, pastas, a hearty polenta dish, and with all but spiciest stews.
